Wisconsin Mascarpone Melba
Servings: 6

2 cups peeled, sliced fresh peaches
1/4 cup peach schnapps liqueur
1 cup (8 ounces) Wisconsin Mascarpone cheese
1/4 cup sugar
1/2 teaspoon vanilla
3 tablespoons peach schnapps liqueur
1 pint fresh raspberries
Toasted slivered almonds

Cooking Directions:
Put peaches in a small bowl. Add 1/4 cup liqueur and let stand for several hours. In a small bowl, combine the Mascarpone, sugar and
vanilla using an electric mixer. Add 3 tablespoons of liqueur. Beat. Chill. To serve, divide the peaches among 6 stemmed glasses. Top
each with 3 tablespoons Mascarpone mixture. Sprinkle with fresh raspberries and almonds. Serve immediately.
