Pear and Apricot Compote

    Serves 6 

    2 cups port wine

    2 cups water

    1/2 teaspoon cinnamon

    1/4 teaspoon ground cloves

    4 whole fresh pears, cored and quartered

    8 each dried apricot halves

1/2 cup sliced almonds 

Bring port, water, cinnamon and cloves to a boil.  Add pears and apricots to the port.  Reduce heat to low and simmer for 30 minutes, or until pears are tender.  Remove pears to a bowl.  Bring the port back to a boil and cook until liquid is reduced to thick syrup.  Pour the syrup over the pears and apricots and stir in chopped almonds. This can be served warm or chilled.
