Brochette with caramelized leeks and goat cheese

    8 pieces French baguette slices, toasted

    4 ounces goat cheese

    1/2 cup leeks, sliced 1/4" thick

    1 tablespoon butter

    1 teaspoon turbinado sugar

    salt and pepper to taste 

    . Heat butter in skillet, at leeks, salt pepper and surge and cook over medium heat until caramelized.  

       Spread in piece of toast with teaspoon of goat cheese, top with 1 teaspoons caramelized goat cheese.
