Angle Food Cake with Mascarpone Coffee Whip

Everyone loves dessert!  This one is easy and quick!

    Serves 8 

    2 tablespoons boiling water

    2 tablespoons instant coffee

    3/4 cup mascarpone cheese

    2 cups Cool Whip Lite®

    12 ounces angel cake, whole, purchased

    1/2 cup coffee liqueur

    2 tablespoons cocoa powder 

    Stir the water and instant coffee in a large bowl to blend. Using a large rubber spatula, fold in mascarpone.

Next, gradually fold in cool whip until mixture is well blended. 

Cut the angel food cake into 8  wedges. Brush 1 side of each wedge of cake with the liqueur. Place a wedge (liqueur side up) on each plate. Dollop the mascarpone coffee whip on top of each wedge of cake. Dust with the cocoa powder and serve.
